Not ones to keep secrets, Rosen, the grandson of Junior's founder, and Allen (Junior's Cheesecake Cookbook) start with the recipe that has been the backbone of Junior's success, the New York Cheesecake. They present a nice collection of recipes accompanied by historical and anecdotal sidebars that do not distract. If there are any surprises here it is the inclusion of a small group of soda fountain desserts, including egg creams, freezes, shakes, malts, and sundaes. The bulk of the recipes are mostly standards of the restaurant: tall cakes, down-homey pies, cupcakes, and tarts and cookies. The authors even reach into the archives of Junior's first menu and include a recipe for Nesselrode Whipped Cream Pie, a rum custard pie, largely absent from contemporary menus.
Verdict There is a definite New York influence here, seen in egg creams, rugelach, and desserts inspired by black-and-white cookies; however, with a troubleshooting section and baking hints along the way, this book could easily be used as a resource for standard desserts. The recipes are too good to pass up. —Library Journal

Alan Rosen, the grandson of Junior’s founder, Harry Rosen, is the third generation co-owner (with his father, Walter, and brother, Kevin) of Junior’s restaurants in Brooklyn, Times Square, Grand Central Station, and at the Foxwoods Casino in Connecticut. He also oversees Junior’s mail-order and wholesale businesses, as well as its online business, juniorscheesecake.com. Alan makes regular appearances on QVC and The Food Network.
Beth Allen is a recipe developer, cookbook author, and co-author of Welcome to Junior's! and Junior’s Cheesecake Cookbook.

Yum, I love cheesecake!

Junior's is well known for their cheesecakes, which are considered by many to be the best in the world. Located in Brooklyn, it's a must-go for lots of visitors to New York.
So if you're a cheesecake lover, you're going to be thrilled they have a cookbook now, and the book does start with some great cheesecake recipes. Classic New York style to start with, then getting into more complicated cheesecakes. Personally I had to wipe up a little drool after just reading the recipe for the Red Velvet Cheesecake which is a "skyscraper" style cake, 5 inches tall with cake, cheesecake and cream cheese icing. The tiramisu charlotte is a new favorite for my family.
After the cheesecake recipes comes a chapter on soda fountain desserts. Perfect egg creams, orange freeze drinks, milkshakes, malted and ice cream treats. As much as I love cheesecake, this is my favorite chapter. My family loves ice cream, I'm pretty sure if you asked my dad, he would say it's favorite food. This is the chapter for hot sunny days.
Black and Whites covers two-tone desserts that are stylish and tasty. Cheesecakes, cookies, malteds and a couple other recipes. The Oreo Little Fellows look like the perfect cool dessert for my daughter's July birthday.
Layer Cakes and Cupcakes is self explanatory and full of wonderful baked goods. My favorite in this chapter is Grandma's Lemon Loaf. It's plain looking compared to the rest of the desserts, but I love loaf cakes.
Pie Shoppe has whipped cream pies, adorable tartlets and classic pie recipes. Recommended- the Bourbon Sweet Potato Pie.
Save Room For Dessert has recipes that don't fit into the rest of the chapters like blintzes, brownies, cookies and pudding. It even includes a recipe for fried cheesecake.
For Those Watching Their Sugar is where this book becomes very much a favorite for me. I don't have to watch mine, but my uncle is diabetic and I like making him a special treat every so often. With several cheesecake recipes, a muffin recipe and a couple mousse recipes, this one will keep him happy for years.
The last chapter contains instructions for things that are used in several recipes. Crusts, sauces, whipped cream and ganache.
The instructions for the recipes are clear and well written, and there are bits of trivia and tips sprinkled liberally through out the book. The photos are incredible.

Good recipes and great tips

Junior's restaurants in New York are known for great food and delicious cheesecakes. Junior's Dessert Cookbook contains 75 recipes including their famous cheesecakes, layered cakes, and pies. The chapter on the basics includes sauces, buttercreams, and decorations for the different desserts. And if you become stuck or there is a problem with the baked items, the table at the back of the book lists probable causes and how to fix it next time around.
Chapters include recipes for all their favorites: Junior's Famous Cheesecakes; Fabulous Soda Fountain Desserts; Black & White; Junior's Layer Cakes and Cupcakes; Junior's Pie Shoppe; Save Room for Dessert; For Those Watching Their Sugar; Baker's Basics; What to Do If Your Dessert Is Not Perfect; and Metric Equivalents.
All in all, a good dessert cookbook. Their cheesecakes are the main draw to their menus, and the recipes for them deliver. The recipes stress using quality ingredients, and the many tips encourage successful baking.

Diner style food - trusted recipes

I have 3 of the Junior's cookbooks and I have yet to be disappointed in any recipe. Even when I exchange healthier ingredients among those indicated, I get a good outcome. Some of these recipes have been adopted as our 'go to' recipes for family events.
